One single recipe that can be served for any meal of the day? That's exactly why I ADORE quiches.

What is a Quiche

A Quiche is a traditional FrenchSavoury Tartmade from two elements:

  • A Filling made from Eggs and Cream Base, and often mixed with other ingredients like vegetables, herbs and/or cheese.
  • A Savoury Pastry Crust, usually Shortcrust Pastry or Puff Pastry. Can sometimes also be crustless!

How do you make a quiche from scratch?

There are SO many ways to make a quiche - whether you want to make it fully from scratch or use pre-made, store-bought elements like the Pastry.

Quiche Pastry

It is completely up to know whether you use a pre-made crust from the store, or make your own. I personally always make my own savoury shortcrust pastry from 4 basic ingredients:

  • Plain Flour
  • Salt
  • Cold Butter
  • Cold Water

Vegetarian Quiche Fillings

The most important ingredients needed to make veggie quiche recipes are obviously the vegetables! With so many options and ingredient combinations to make a healthy quiche, it is time to get creative!

Here are some of my favourite vegetables to use:

  • Cherry Tomatoes
  • Asparagus
  • Mushroom
  • Leek
  • Spinach
  • Zucchini
  • Pumpkin
  • Broccoli

FAQs

Is heavy cream better than milk in quiche? ›

Heavy Cream and Milk – For the best tasting quiche, use a combination of whole milk and heavy cream. (Or simply use half-and-half.) Using just heavy cream produces an overly thick filling. Whole milk is great, but a combo of heavy cream and milk is better.

Should vegetables be cooked before putting in quiche? ›

"Vegetables will take longer to cook than your egg custard, so always sauté onions, steam broccoli, etc. before you add them to your egg mixture to ensure every bite of quiche will be perfectly cooked," says Kristin Beringson, executive chef at Henley in Nashville.

What are 3 main differences between a frittata and a quiche? ›

Origin: Frittata is an Italian dish whereas quiche is a French dish. Crust: A quiche has crust while a frittata does not. Sometimes, quiche is baked without crust. Base Ingredients: While both frittatas and quiches are made with eggs, quiche is made with an egg custard, which also includes cream or milk.

What can I use in quiche instead of heavy cream? ›

Use half-and-half as a 1:1 substitute for heavy cream. It can work nearly as well for bringing creamy texture and flavor to sauces, soups and stews, mashed potatoes, quiches, and casseroles. In a pinch, it can even be used for whipping. While you won't get stiff peaks, you can build volume if you work quickly.

Can I substitute Greek yogurt for heavy cream in quiche? ›

If you're low on dairy ingredients, don't fret. Greek yogurt can substitute milk, sour cream and heavy cream. Milk: If you're short on milk, half and half or light cream, Greek yogurt can be used to make up for the difference.

Does pie crust need to be prebaked for quiche? ›

You need a par-baked or fully baked crust if you're making quiche, no-bake pie, custard pie, cream pie, pudding pie, or simply want an extra-crisp pie crust. If you're making a pie that doesn't require a baked filling, you still need a baked crust.

Is it OK to bake quiche a night before? ›

Whether you serve it as an appetizer or a main dish, quiche can either be cooked ahead of time and served warm, cold, or at room temperature.

Why is my quiche always soggy? ›

Wet fillings will produce a soggy quiche

These vegetables, while tasty, have a high water content when raw, which will weep into the quiche as it bakes.

What do you call a quiche without pastry? ›

Frittatas are Italian in origin and can be described as a cross between an omelet and a crustless quiche. Frittatas take less time to make than quiche or strata. The dish is traditionally made by beating eggs with dairy—often heavy cream or half and half—together with ingredients like vegetables, meats and cheeses.

What does Lorraine mean in quiche? ›

Quiche Lorraine has origins beginning in the rural Lorraine region of France. While it's considered a French dish, it developed during a time when the Lorraine Region was under German rule. Even the word Quiche comes from the German word kuchen, meaning cake.

Can you freeze quiche? ›

You can freeze quiche for up to 3 months with excellent results, and you have several options for doing it: You can assemble and freeze it before baking, you can bake and then freeze the quiche for reheating later or you can freeze the unbaked filling and crust separately.

What is the formula for quiche? ›

Ratios: The best way to make a quiche is to add the eggs to a large measuring cup, then add the cream or milk. For every egg used you should add enough milk or cream to create a 1/2 cup. Meaning for 1 egg you will add enough cream or milk to make 1/2 a cup of mixture.

Why is my homemade quiche watery? ›

If your quiche appears too watery to serve it could be because it was overbaked or underbaked, the egg to dairy ratio was not correct, the ingredients have too much liquid or it was baked on the wrong rack in the oven.

Is coconut cream better than heavy cream? ›

Heavy cream has signficantly more Vitamin D than coconut cream. Coconut cream is a great source of dietary fiber and iron, and it is an excellent source of potassium. Both coconut cream and heavy cream are high in calories and saturated fat. Coconut cream has signficantly less cholesterol than heavy cream.

Is it better to use milk or heavy cream? ›

Full-fat dairy products such as heavy whipping cream contain more of the fat-soluble vitamins A, D, E, and K than low-fat or nonfat dairy. Also, your body absorbs fat-soluble vitamins better when you consume them with fat.

What happens if you use heavy cream instead of milk in baking? ›

Milk contributes not only moisture but also structure due to its protein content. Replacing milk with heavy cream can introduce too much fat, potentially altering the texture and causing goods to become overly dense.

Is milk or heavy cream better for eggs? ›

Milk can dilute the flavor of scrambled eggs, but adding crème fraîche or heavy whipping cream can bring out the depth of flavor you're trying to achieve. Additionally, milk is known for turning scrambled eggs into chewy chunks, while cream does a better job of holding everything together nicely.

Why isn't my quiche creamy? ›

Too little dairy, and your quiche will be dry instead of creamy.
